Wine making: Vintage on maturée, collected manually between the end of November and at the beginning of December.
Pressing of the whole bunches.
Cold washing 15°.
Control temperatures (13° with 15°) during fermentation. After racking the wine is placed out of barrel for an ageing from 12 to 16 month.
Grape varietie: Sauvignon.
Tasting: Wrap yellow ambrée, nose complexes (honey, peels of crystallized citrus fruits, (oranges and grapefruits) pineapple, notes coconut and vanilla.
Our Advice: Splendid on a foie gras, fish soup, steaklet of
duck, crab, roquefort, chocolate cake etc
To taste between 10 - 12°.
Conservation 10 years.
